This popular delicacy can be used to make many different and delicious snacks, such as cod liver pate. In addition to the main ingredient, it may contain other products: hard cheese, chicken or quail eggs, onions, herbs, pickled or pickled cucumbers, mushrooms. The finished pate can be served immediately on the festive table in tartlets or on bread, or stored in the refrigerator.

Ingredients

  • 1 chicken egg
  • 1 shallot
  • 100 g cod liver in oil
  • 1 tbsp. l. mayonnaise
  • 2 pinches of salt
  • 2 pinches of black pepper
  • 2-3 sprigs of greens before serving

Preparation

1. Hard-boil the egg, cool, peel and grate on a fine grater. If you plan to use a blender, you can grate or chop as convenient. Peel a small onion and finely chop. Place the onion and egg into a bowl.

2. Open the jar of cod liver, transfer the required amount into a bowl.

3. Add mayonnaise to the bowl, as well as a little salt and ground black pepper.

4. Grind additionally all the products in a bowl using an immersion blender. Or, thoroughly mash all the ingredients with a teaspoon or fork (in this case, the consistency of the pate may not be as uniform).

Just one of those dishes, a small portion of which fills you up and completely extinguishes the feeling of hunger due to its calorie content (613 kcal per 100 g). Tartlets, canapés, slices of bread spread with egg pate with cod liver are difficult to classify as 100% gourmet food (delicacies), but they are, without a doubt, good and tasty sandwiches.

It is known that Atlantic cod liver is sold in its own fat: it is preserved while still raw, often seasoned with bay leaf and black pepper. It contains 60% fish oil, in addition, vitamins A, D, E, unsaturated fatty acids, proteins, iodine, folic acid.

After opening the jar, you can immediately serve with boiled vegetables, eggs, herbs and onions. And if you want to experiment, feed a larger number of household members or friends and significantly increase the volume of the product, make egg pate with cod liver. It contains vegetables (carrots plus onions), which not only increase NETTO, but also enrich the taste.

    If calories don't matter to you and you like richer foods, immediately transfer the entire contents of the can into a food processor. If you think that the fat content is too high, dry the pieces of cod liver from the fat in which it floats. Pry it out of the fat, shake it off and leave it on the laid out paper for a while - the napkin or parchment will quickly absorb the excess fat layer. At the same time, boil the eggs hard and let cool.

    After peeling the onions, chop them into small cubes to fry faster. You can cut it into strips, half rings, and still grind it later. Heat the frying pan, pour in refined vegetable oil. Anything without a strong odor and non-smoking is suitable here, including olive oil. After 30 seconds, add the onion slices and at moderate temperature, stirring occasionally, sauté until golden brown. Instead of onions, take leeks, shallots, less spicy salad varieties, as well as garlic - keep in mind that the strong garlic aroma can overpower the delicate taste of cod liver.

    Three standard or small carrots. You should not cut into circles, bars or anything else large. Then the hard root vegetable will have to simmer for a long time. Add the carrot heap to the gilded onions, stir with a spatula and continue frying over low heat for the next 7-10 minutes. For this snack, it is important to find sweet, not dehydrated and dry, but juicy carrots. It would be nice to have a young one in season.

    In case of substitution, I recommend pumpkin instead of carrots. Both fresh and frozen. Transfer from the freezer to the main compartment in advance and slowly thaw. Then grate the pumpkin pulp (without seeds and thread-like fibers) in the usual way and send it after the fried onions. By the way, pumpkin softens much faster than carrots and often gives more sweetness.

    We try, add a couple of tablespoons of boiling water to the hard mixture and if there is a lack of moisture, simmer for a few minutes under the lid. The main thing is to completely simmer and soften the wet onion sauté. Once the result is achieved, remove from the stove and cool. To cool faster, place refrigerant underneath or transfer to a cold container.

    That's it, the preparatory work is behind us - at this stage we have hard-boiled, cooled and peeled eggs, soft onions and carrots, cod liver dried from excess fat. We put the assortment into the chopper bowl, start the unit, puree and combine all the components into a single mass. The same can be easily done by passing it through a meat grinder.
